Zfiti food
The zufiti dish, or batout, or maharas is one of the traditional Algerian dishes that is famous in their region. It consists of onions, hot peppers, tomatoes, and garlic mashed with a manual masher. The vegetables are ground with a crumb of bread made of semolina and water, and it is served with yogurt, and they are similar in taste. Preparing with hot daqoos sauce, and in this article, the recipe for Algerian zefiti in their original way will be presented.
Ingredients:
- Four tomatoes.
- A quarter teaspoon of cumin.
- Half a teaspoon of salt.
-Three crushed garlic cloves.
-One green hot pepper.
-Two cups of fine semolina.
How to prepare:
Cut four tomatoes and one green hot pepper into small cubes, put them in a bowl, then add three crushed garlic cloves, and stir well.
Season the vegetable mixture with a quarter teaspoon of salt and a quarter teaspoon of cumin, and stir well.
In a deep bowl, put two cups of fine semolina with a quarter teaspoon of salt, and knead it gradually with one cup of water until you get a large circular dough.
Spread the dough inside the baking tray, and bake it in the preheated oven at 200 degrees Celsius for a quarter of an hour until it becomes golden on the bottom, then lift it on the grill until it browns on top.
Leave it until it cools, then cut it into small pieces.
Place the seasoned vegetables with the small pieces of bread in the food processor, mash them well, and add a little water gradually until you obtain a soft consistency.
Pour it into a suitable serving dish, and serve it with yogurt.
