Cappuccino mousse

the components

- Two tablespoons of dried coffee, instant coffee.
- Two tablespoons of hot water.
- Two hundred and fifty grams of plain chocolate.
- A cup of cream. A teaspoon of liquid vanilla.
  - The whites of two large eggs.
- Four tablespoons of fine-grained sugar.
- An amount of cocoa powder for decoration.

How to prepare

Prepare a small cup and dissolve the coffee in hot water, leave it aside, then grate the chocolate or chop it into small pieces to make it easier to melt. Bring a small stainless steel pot and heat the cream over medium heat until bubbles appear, then remove it from the heat, add chocolate and vanilla, and stir until the chocolate melts. We take about two-thirds of the chocolate, put it in a deep dish, then add the coffee to it and stir it until it melts, until its temperature becomes room temperature - without putting it in the refrigerator - and it smells like chocolate with coffee. We put the rest of the chocolate in a deep dish, do not put it in the refrigerator, and call it plain chocolate. Bring the mixer bowl, put the egg whites in it, and beat them with the whisk until the egg whites become white, then add the sugar to it gradually and whisk constantly in a slow motion, then with a medium motion until the egg whites become firm. We take about a third of the egg whites, mix them with the coffee-chocolate mixture, and mix the rest of the egg whites with the plain chocolate. Prepare serving dishes, place the mousse in them alternately, and place them in the refrigerator until the mousse solidifies. Sprinkle cocoa on top, then put the chocolate pieces and serve.
