Couscous with meat and vegetables
Couscous or couscoussi is a very old North African dish. It is made from durum wheat or corn semolina, rolled into small grains, and eaten with a spoon or by hand. Cook with steam and add meat, vegetables, peeled green beans, milk, butter, and fine sugar according to tastes and occasions. Any lover of this dish can prepare it at home with ease. Here is the preparation method.
Ingredients :
-One and a half kilo of meat.
-One kilo of couscous.
-One and a half kilo of onions.
-A cup of cooking oil.
-A tablespoon of local ghee for spreading the couscous.
-A teaspoon of local ghee.
-Mixed vegetables (as desired).
-250 grams of raisins.
-250 grams of chickpeas, soaked in water overnight.
-1 teaspoon ibzar (black hot pepper).
-A teaspoon of ginger.
-2 crushed tomatoes.
-A small bunch of parsley and coriander.
-saffron.
-salt.
-100 grams of semolina sugar.
-A tablespoon of cinnamon.
-150 grams fried almonds.
Preparation steps:
In the couscous pot (recipe specific), place the pieces of meat, ghee, two chopped onions, saffron, salt, pepper, ginger, and a cup of oil.
Mix everything well until the meat pieces are saturated with the spices, then place the pot over moderate heat.
When everything is well fried, add the crushed tomatoes, coriander bouquet, and parsley, then stir everything well.
When the mixture boils, add 3 liters of water, then the chickpeas and leave everything to cook for 45 minutes.
In the meantime, cook the couscous over the steam rising from the stock, stirring it from time to time. When it is cooked, add a little broth and ghee to it. When 45 minutes have passed, add the onions cut into thin slices, then the purified and washed raisins or mixed vegetables, and leave everything to simmer for about 20 minutes. Make sure that the onions do not melt and the raisins do not dissolve or become kneaded.
Add cinnamon and sugar, then cook for 10 minutes.
After that, put the couscous and spread it with local ghee and sprinkle a little salt on it as desired, then hollow out its middle and place the pieces of meat in it, then cover it with onions, raisins and chickpeas, and pour the whole thing with broth and decorate with fried almonds.
